The pâtisserie

Baked before sunrise.

Every pastry on the counter was dough at four in the morning.

Our pâtissiers start while Coral Gables is still asleep — laminating butter by hand, proofing slowly and baking in small batches, so the first croissant you buy is never more than an hour out of the oven.

  1. 4:30 AMButter folded into the dough, three turns
  2. 5:45 AMFirst tray of croissants into the oven
  3. 6:40 AMGlaze, pistachio cream, a last dusting
  4. 7:00 AMDoors open on Giralda Avenue

Cakes & celebrations

Celebrations, made by hand.

Birthdays, showers, anniversaries — every cake is designed with you, then baked, filled and piped by hand. Order at least 3 days ahead.

Sponge, filling, finish, florals and a message — priced live.

The team

The hands behind the counter.

  • Head Pâtissier

    Camille Laurent

Trained in Lyon, laminating croissant dough at 4:30 every morning — and still tasting every batch.

  • Head Barista

    Mateo Rivera

Pulls the first shot of the day and pours every rosetta on our signature latte by hand.

  • Cake Designer

    Inès Moreau

Sketches every celebration cake before piping a single rosette; florals are a speciality.

  • Café Manager

    Daniela Ortiz

Born and raised in Coral Gables — knows the regulars' orders before they reach the counter.

Testimonials

Kind words

The Rosette Latte is the reason I walk the long way to work. Rose, a little cardamom, and a rosetta that is almost too pretty to drink.
